crispy squid, shichimi
Description
Squid is marinated in za’ataar before being deep fried. Served with a red zouhg aioli. Garnished with schichimi, an asian spice blend translating to “seven spice” - the core components of shichimi include coarse chili pepper, dried orange peel, black and white sesame seeds, ground ginger, Japanese pepper (such as sansho pepper), and perilla (shiso) or seaweed.
Method
Squid is marinated and stored in za’atar. the squid is tossed in flour and deep fried to order. Once out the fryer, the squid is garnished with schichimi. Aioli is made by combining oil and eggs, and finishing with red zhoug and chili.
