Method

Laffa is a thin, soft, middle eastern flat bread. We use wildfarmed flour, a UK company that helps farms gain biodynamic and organic certification. Our laffa is cooked to order over the charcoals, resulting in soft, warm, smoky bread. Finished with flaky salt and olive oil.

Description

after combining sugar, water, yeast, and flour and mixing, a tangzhonh is added. Tangzhonh is a roux of water and flour cooked together. Adding this to the dough allows for better moisture retention. More moisture results in a softer and fluffier bread. For our laffa, we use a mixture of wildfarm T80 whole grain flour, and wildfarmed T65 bread flour. the lower the t number, the higher the refinement of the flour and the whiter the colour. We find the mixture of t80 and t65 to be the best for texture and flavour.
